Ingredients
- 1 pack Silver Fern Farms Beef New York Strip Steak
- 5 Tbsp olive oil
- 1 large sweet potato
- 1oz dried porcini mushrooms
- 6oz butter, softened
- 1 shallot, finely diced
- 1 tsp thyme leaves
- 1 Tbsp chives
- 1 small head broccolini
- Almonds, roasted and chopped
Method
Remove Silver Fern Farms Beef New York Strip Steak from packaging and set aside to bloom before cooking. Rub the steak with 1 tablespoon of olive oil, salt and freshly cracked pepper.
Preheat oven to 350°F. Scrub the sweet potato, to remove any dirt. Cut the whole sweet potato up into batons/sticks. Lay on a baking tray lined with baking paper. Drizzle with 2 tablespoons of olive oil and sprinkle with sea salt. Bake for 30 minutes and remove from the oven.
Soak porcini in a cup of boiling water for 10 minutes. Squeeze out water the chop. In a blender mix the butter, shallot, thyme and chives and porcini. Season to taste. Wrap and quickly chill.
Cut broccolini into small florets, Place broccolini into a bowl and pour in 1 cup of boiling water. Drain the broccolini and place into a serving bowl, season with salt and freshly cracked pepper.
Heat a skillet or grill plate until hot. Cook the steak for 3 minutes on one side, 3 minutes other side and edge for 1 minute for medium rare.
Remove steak from pan and cover with foil. Leave to rest for 10 minutes.
Serve the steak topped with slices of the porcini butter, and accompany with sweet potato fries, broccolini and chopped almonds.
