4–6 baby carrots, peeled

2 small parsnips, peeled

2–3 small beets, peeled

2 small red onions, peeled and quartered

4 cups vegetable stock

¾ cup yellow cornmeal (polenta)

½ cup grated Parmesan cheese

Method
Step 1
Preheat oven to 350°F (180°C).
Step 2
Remove lamb rumps from the fridge and packaging. Let sit at room temperature for 10 minutes.
Step 3
Mix miso paste, honey, sesame oil, and pepper. Add 1–2 tablespoons boiling water to thin the glaze and stir until smooth.
Step 4
Trim carrots, parsnips, and beets. Quarter the red onions. Place all vegetables on a baking sheet lined with parchment paper. Drizzle with olive oil and season with pepper. Roast for 20–25 minutes until tender and golden. Reserve vegetables and pan juices.
Step 5
In a large saucepan, melt butter over medium heat. Add vegetable stock and bring to a boil. Slowly stir in cornmeal. Reduce heat to low and cook, stirring constantly, for about 25 minutes until thick and pulling away from the sides of the pan. Stir in Parmesan and season with salt.
Step 6
Heat an oven-safe skillet over medium-high heat. Coat lamb with olive oil. Sear each side for 2 minutes (about 8 minutes total). Pour glaze over lamb and transfer skillet to oven. Roast for 12 minutes for medium-rare. Remove from oven, cover loosely with foil, and rest for 5 minutes. Slice across the grain.
Step 7
Spoon creamy polenta onto plates. Top with sliced lamb and roasted vegetables. Drizzle with reserved glaze and garnish with fresh mint and herbs.
