1 Tbsp olive oil

1 Tbsp lime juice

1 clove garlic, crushed

1 tsp brown sugar
-
¼ - ½ tsp chipotle powder

Flour tortillas, sour cream, extra coriander to serve

2 tomatoes, finely chopped
-
1 small roasted red bell pepper, finely chopped
-
1 tsp hot chili sauce
-
2 Tbsp chopped cilantro
-
Juice of 1 lime
-
14oz can black beans, drained and rinsed
-
½ small red onion, finely diced
-
½ avocado, diced
-
2 radishes, thinly sliced
-
Juice of 1 lime

Method
Step 1
Remove the Silver Fern Farms Beef Tenderloin Steaks from the packaging and pat dry. Combine the olive oil, lime juice, garlic, brown sugar and chipotle powder in a small bowl. Add the steaks, coat well with the marinade then cover and stand for 10 minutes at room temperature.
Step 2
Meanwhile, prepare the salsa. In a bowl, combine the chopped tomatoes, red bell pepper, hot chili sauce, cilantro and lime juice. Season well. Set aside.
Step 3
To prepare the salad, combine the black beans, red onion, avocado and radishes. Add lime juice, season and toss to coat.
Step 4
Remove the steaks from the marinade and season with salt and pepper. Heat a frying pan or barbecue over medium-high heat. Cook steaks for 3-4 minutes on each side for medium rare. Transfer to a plate, cover with foil and rest for 5 minutes.
Step 5
To serve slice steaks thinly across the grain. Serve with warmed tortillas, the salsa, salad and sour cream. Garnish with extra cilantro.
