This rack of lamb recipe from @thebalanceddietitian is impressive enough to serve at a dinner party, but surprisingly easy to cook and absolutely delicious!

2x Silver Fern Farms Lamb Frenched Racks
1 tbsp avocado oil
Salt and pepper to taste
2 Tbsp dijon mustard
8-10 garlic cloves, grated
2 springs rosemary leaves, chopped
To serve: mashed potato and roasted vegetables
Preheat oven to 400 degrees.
If desired, trim any unwanted fat on the lamb rack.
Generously season with salt and pepper.
Add one tablespoon of avocado oil to a large skillet over high heat. Sear lamb racks for 2-3 minutes on each side, until golden brown all over.
Transfer the lamb to a small baking pan to let cool. Meanwhile, finely chop garlic cloves and rosemary and combine in a small dish.
Coat the lamb in dijon mustard, then rub garlic and rosemary mixture all over the lamb rack.
Transfer to the oven, and roast for 15 - 20 minutes.
Let it rest for at least 10 minutes before slicing, then serve with desired sides.
