This is because vacuum sealing removes the air from the packaging to keep it fresher for longer, which can cause a reaction that can result in a slightly off smell or discolouration of the meat. Simply opening the packaging and allowing the meat to come into contact with air for a few minutes should eliminate any odor or discolouration, allowing you to enjoy your fresh and delicious meat as intended.
