Ingredients

  • 1 pack of Silver Fern Farms Lamb Medallions
  • Kosher salt and freshly ground black pepper
  • 1 cup Italian parsley leaves
  • ¼ cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 1 small jalapeno chili pepper, chopped
  • 1 garlic clove, sliced
  • ¼ tsp ground cumin
  • 2 cups cooked pearl couscous
  • 1 14oz can chickpeas, drained
  • ½ cup crumbled feta cheese
