Ingredients

  • 1 tbsp olive oil

  • 1 pound pack Silver Fern Farms 85% Lean Ground Beef

  • 1 tsp ground cumin

  • ½ tsp chili powder or to taste

  • ½ tsp dried oregano

  • ½ tsp garlic powder

  • ½ tsp salt

  • 2 tbsp tomato paste

  • ½ cup water

  • Pico de Gallo:

  • 2 small tomatoes, diced

  • ½ small white onion, finely diced

  • ¼ cup chopped fresh cilantro

  • 2 tbsp lime juice

  • 1 garlic clove, minced

  • 1 jalapeno pepper, finely diced

  • To Serve:

  • 8 tortillas, warmed

  • ½ avocado, sliced

  • Cilantro sprigs

  • Spicy sunflower seeds

  • Lime wedges

Method

Step 1

Heat the olive oil in a large skillet over medium high heat. Add the ground beef and cook, stirring, for 5 to 7 minutes or until browned.

Step 2

Add the cumin, chilli powder, oregano, garlic powder and salt. Cook, stirring for 30 seconds.

Step 3

Stir in the tomato paste and water. Bring to the boil then simmer for 4 to 5 minutes until the sauce has thickened.

Step 4

Meanwhile, prepare the Pico de Gallo. Combine the tomatoes, onion, cilantro, lime juice, garlic and jalapeno. Season to taste with salt and pepper.

Step 5

Serve the sauce warm over tortillas with avocado, cilantro and spicy sunflower seeds. Serve with lime wedges.
