2 Tbsp olive oil

1-2 cloves garlic, crushed

1 tsp ground cilantro

1 Tbsp cumin

2 Tbsp onion powder

1 tsp ground chipotle powder

1 cup mayonnaise

6 slices crusty bread

6 slices Swiss cheese
-
1 cup watercress, stalks removed

1 small red onion, sliced

2 pieces grilled red bell pepper

Method
Step 1
Remove the Silver Fern Farms Beef Tenderloin Steaks from packaging and set aside to bloom before cooking.
Step 2
Oil and season the steaks. In a small bowl mix the garlic, cilantro, cumin, onion powder and chipotle powder together. Use half to rub onto the Beef Tenderloin Steaks. Mix the remainder spice mix into the mayonnaise and refrigerate until needed.
Step 3
Heat a skillet, frying pan or BBQ plate pan on moderate to high heat. Grill the beef steaks for 3 minutes on each side (for medium-rare)
Step 4
Remove the steaks from the pan. Rest for 5 minutes, covered with foil. Slice across the grain for maximum tenderness.
Step 5
Heat a skillet, frying pan or grill plate pan on moderate to high heat. Gently rub bread slices with 1 tablespoon of olive oil, lay slices on the grill and top with Swiss cheese. Once the bread is browned and the cheese has melted, remove from heat.
Step 6
Top two of the toasted cheese melts with watercress, red onion, bell pepper, spicy mayonnaise and sliced steaks. Top with the remaining toasted bread cheese side down. Add dill pickles.
