Our Venison Medallions are derived from the Denver leg of deer. Medallions are essentially small, round or oval-shaped pieces of meat that have been cut from a larger piece of the deer. Each piece has been carefully trimmed and portioned providing great versatility for your various meal occasions. Our medallions are supremely lean and tender, making them an excellent option for those after a healthier pasture raised alternative.

In New Zealand we have the ability to grow quality, nutritious grass year-round, this allows deer to be raised in a more natural way, raised on pastures and easting fresh grass everyday. When it comes to cooking Venison Medallions, rub oil over the medallions and season with salt & pepper. We then recommend pan-frying or BBQing them for best cooking results, just taking 2-3 minutes on each side for a medium rare result. Once done, Transfer to a plate, cover, and rest for 5 minutes.
