1 small onion, diced
1 garlic clove, crushed
1 tsp freshly grated ginger
2 cardamom pods
½ tsp red pepper flakes
½ tsp ground turmeric
½ tsp ground coriander
½ tsp ground cumin
1 tsp garam masala
1 (14 oz) can crushed tomatoes
½ cup coconut milk
2 tbsp chopped cilantro

¼ cup plain Greek yogurt
3 garlic cloves, roughly chopped
1¼-inch piece fresh ginger, roughly chopped
2 tbsp chopped cilantro
1½ tsp garam masala
1 tsp ground coriander
1 tsp ground cumin
Salt, to taste
Remove lamb from the fridge and packaging. Let sit at room temperature for 10 minutes.
In a food processor, blend yogurt, garlic, ginger, cilantro, garam masala, coriander, cumin, and salt until smooth. Slice lamb into 1¼-inch pieces, mix with marinade in a non-metallic bowl, cover, and refrigerate overnight.
Heat a Dutch oven or heavy casserole dish over medium heat with oil. Brown lamb in batches for 4–5 minutes until golden. Remove and set aside.
Reduce heat to medium-low. Add onion and cook for 2–3 minutes until softened. Stir in garlic, ginger, cardamom, red pepper flakes, turmeric, coriander, cumin, and garam masala. Cook for 1–2 minutes until fragrant. Season with salt and pepper.
Return lamb and juices to the pot. Add crushed tomatoes and coconut milk. Stir well, scraping up any browned bits. Bring to a boil, then cover and simmer gently for 1 hour, or until sirloin steaks are very tender. Stirring occasionally.
Garnish with chopped cilantro. Serve with coconut rice, garlic naan, and red onion, tomato, and cilantro salad.
