Ingredients

  • 4 Silver Fern Farms Lamb Sirloin Steaks

  • 2 tsp cumin seeds, toasted

  • 2 tsp ground paprika

  • 2–6 garlic cloves, peeled (adjust to taste)

  • 2 red chilies, deseeded and chopped

  • ½ cup chopped parsley

  • 2 tsp ground coriander

  • Salt and pepper, to taste

  • Olive oil

Method

Step 1

Remove the lamb sirloin steaks from the refrigerator and packaging. Let them sit at room temperature for about 10 minutes to bloom.

Step 2

Dry roast the cumin seeds and paprika in a pan until fragrant. Transfer to a food processor and add garlic, chilies, parsley, ground coriander, salt, and pepper. Process until finely ground into a paste.

Step 3

Rub each lamb sirloin steaks with olive oil, then coat thoroughly with the spice rub.

Step 4

Preheat your oven to 400°F (200°C). Place the lamb sirloin steaks in a baking dish and roast for 20-25 minutes for medium-rare. Adjust time based on your preferred doneness.

Step 5

Pair with roasted cauliflower florets tossed with toasted almonds, currants, paprika, chopped green onions (spring onions), and diced dried apricots. Serve with a side of harissa for extra flavor.
