1 lb Silver Fern Farms Premium Ground Lamb

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp fresh mint, finely chopped

1 tbsp fresh cilantro, finely chopped

1 tsp ground cumin

1 tsp ground coriander

1 tsp salt

1 egg, lightly beaten

1/4 cup breadcrumbs

4 pineapple rings, fresh or canned

2 tbsp brown sugar

1 tbsp butter
-
1 cup shredded cabbage
-
1 cup shredded carrots
-
1/2 cup thinly sliced red bell pepper

1/4 cup chopped fresh cilantro

2 tbsp rice vinegar
-
1 tbsp soy sauce
-
1 tbsp sesame oil
-
1 tsp honey
-
1 tsp grated ginger
-
Salt and pepper, to taste

4 burger buns, toasted

1/2 cup mayonnaise

1 tbsp sriracha (optional, for spicy mayo)

Method
Step 1
In a large bowl, combine Silver Fern Farms Premium Ground Lamb, onion, garlic, fresh mint, fresh cilantro, ground cumin, ground coriander, salt, egg, and breadcrumbs. Mix well until all ingredients are evenly incorporated. Divide the mixture into 4 equal portions and shape each portion into a patty. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Step 2
In a skillet, melt the butter over medium heat. Add the pineapple rings and sprinkle with brown sugar. Cook for 2-3 minutes on each side, or until the pineapple is golden and caramelized. Set aside.
Step 3
In a medium bowl, combine shredded cabbage, shredded carrots, red bell pepper, and chopped cilantro. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, salt, and pepper. Pour the dressing over the slaw and toss to coat. Set aside.
Step 4
Preheat a grill or skillet over medium-high heat. Cook the lamb patties for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove from heat and let rest for a few minutes.
Step 5
In a small bowl, mix together the mayonnaise and sriracha (if using) until well combined.
Step 6
Spread a generous amount of spicy mayo on the bottom half of each toasted bun. Place a lamb patty on top. Add a caramelized pineapple ring over each patty. Top with a spoonful of Asian slaw and a handful of fresh arugula or mixed greens. Cover with the top half of the bun.
Step 7
