1 lb Silver Fern Farms Premium Ground Lamb

1 small onion, finely chopped

2 cloves garlic, minced

1 egg, lightly beaten

1/4 cup breadcrumbs

1/2 cup crumbled feta cheese

Zest of 1 lemon

1 tbsp lemon juice

1 tbsp olive oil

Freshly ground black pepper, to taste

1/2 cup plain Greek yogurt

2 tbsp finely chopped fresh mint

2 tbsp finely chopped fresh parsley

1 tbsp lemon juice

Salt and pepper, to taste

4 burger buns, toasted

Fresh arugula or mixed greens

Sliced tomatoes

Method
Step 1
In a large bowl, combine Silver Fern Farms Premium Ground Lamb, onion, garlic, oregano, cumin, smoked paprika, salt, pepper, egg, and breadcrumbs. Mix well until all ingredients are evenly incorporated. Divide the mixture into 4 equal portions and shape each portion into a patty. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Step 2
In a small bowl, mix together the crumbled feta, lemon zest, lemon juice, olive oil, and black pepper. Set aside.
Step 3
In another small bowl, combine the Greek yogurt, chopped mint, chopped parsley, lemon juice, salt, and pepper. Mix until smooth and set aside.
Step 4
Preheat a grill or skillet over medium-high heat. Cook the lamb patties for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove from heat and let rest for a few minutes.
Step 5
Spread a generous amount of herb sauce on the bottom half of each toasted bun. Place a lamb patty on top. Add a spoonful of lemon feta over each patty. Top with fresh arugula or mixed greens, sliced tomatoes, and sliced red onion. Cover with the top half of the bun.
Step 6
