1 onion, finely chopped

2 cloves garlic, crushed

½ teaspoon chipotle powder

1 teaspoon rosemary, finely chopped

1 (14-ounce) can cherry tomatoes or chopped tomatoes in juice

1 cup beef stock

1 teaspoon brown sugar

1 cup self-rising flour

2 tablespoons (about 1 ounce) butter

¼ cup grated parmesan

2 tablespoons fresh herbs (mix of parsley, cilantro, and chives), chopped

Method
Step 1
Preheat the oven to 340°F (170°C).
Step 2
Remove the Silver Fern Farms Venison Diced from the fridge and packaging, and allow to bloom at room temperature for 10 minutes.
Step 3
Coat the venison with seasoned flour.
Step 4
Bring a skillet to medium-high heat with oil. Cook the venison for 2-3 minutes until browned. Transfer to a casserole dish.
Step 5
Reduce the skillet heat to low. Add extra oil if necessary, and cook the onion and garlic until soft. Add smoked paprika, chipotle powder, rosemary, cherry tomatoes, beef stock, and brown sugar to the pan. Bring to a boil, then pour the mixture into the casserole dish. Cover and braise in the preheated oven for 60 minutes.
Step 6
After 50 minutes, increase the oven temperature to 400°F (200°C). Place flour in a bowl, add butter, and rub it into the flour with your fingertips until it resembles fine breadcrumbs. Stir in parmesan and herbs, season with salt and pepper. Drizzle in milk and mix to form a light dough.
Step 7
Place spoonfuls of the dough onto the venison, and bake uncovered for 18-20 minutes, until the dumplings are golden and cooked through.
