Ingredients
- 1 packet Silver Fern Farms Beef Rib Eye Steaks
- 1 Tbsp extra virgin olive oil
- 3.5oz butter, softened
- 3.5oz blue cheese
- 1 Tbsp chopped chives
- ¼ tsp nutmeg
Method
Step 1
Remove Silver Fern Farms Beef Rib Eye Steaks from packaging and rub with oil. Season with salt and freshly ground black pepper. Allow the meat to rest at room temp for 10 minutes.
Step 2
Combine butter, blue cheese, chives and nutmeg in a small bowl. Spoon into plastic wrap and roll into a cylinder. Twist ends to seal. Chill in fridge for 10 minutes.
Step 3
Heat a skillet, frying pan or barbecue plate over medium to high heat. Grill the Silver Fern Farms Beef Rib Eye Steaks for 4 minutes one side. Turn and grill for a further 3 minutes the next, turn and sear the sides for 1 minute, for medium-rare. Leave to rest, covered, for 5 minutes.
Step 4
Thinly slice the rib eye across the grain and arrange on a serving plate. Top with dabs of the blue cheese butter.
