Ingredients
- 1 pack Silver Fern Farms Beef Flat-Iron Steaks
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 1 clove garlic, crushed
- 1 tsp brown sugar
- ¼ - ½ tsp chipotle powder
- Flour tortillas, sour cream, extra coriander to serve
Tomato Salsa
- 2 tomatoes, finely chopped
- 1 small roasted red bell pepper, finely chopped
- 1 tsp hot chili sauce
- 2 Tbsp chopped cilantro
- Juice of 1 lime
Black Bean & Avocado Salad
- 14oz can black beans, drained and rinsed
- ½ small red onion, finely diced
- ½ avocado, diced
- 2 radishes, thinly sliced
- Juice of 1 lime
Method
Remove the Silver Fern Farms Beef Flat-Iron Steaks from the packaging and pat dry. Combine the olive oil, lime juice, garlic, brown sugar and chipotle powder in a small bowl. Add the steaks, coat well with the marinade then cover and stand for 10 minutes at room temperature.
Meanwhile, prepare the salsa. In a bowl, combine the chopped tomatoes, red bell pepper, hot chili sauce, cilantro and lime juice. Season well. Set aside.
To prepare the salad, combine the black beans, red onion, avocado and radishes. Add lime juice, season and toss to coat.
Remove the steaks from the marinade and season with salt and pepper. Heat a frying pan or barbecue over medium-high heat. Cook steaks for 3-4 minutes on each side for medium rare. Transfer to a plate, cover with foil and rest for 5 minutes.
To serve slice steaks thinly across the grain. Serve with warmed tortillas, the salsa, salad and sour cream. Garnish with extra cilantro.
