Ingredients

    General

  • 1 pack Silver Fern Farms Premium Ground Lamb

  • 1 tsp salt

  • 1 tsp ground pepper

  • ½ tsp ground cinnamon

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 3 Tbsp olive oil

  • 1 telegraph cucumber, cut lengthwise or sliced thinly

  • 1 red onion, peeled, finely diced

  • 1 cup Italian parsley leaves

  • ½ tsp sumac

  • 4 grilled flatbreads

  • Tzatziki (makes 1 cup)

  • 4.5oz reduced fat unsweetened natural yoghurt

  • ⅓ cucumber, halved lengthways, deseeded and grated

  • 1 clove garlic, crushed

  • ¼ cup fresh mint, chopped

  • 1 Tbsp lemon juice

  • To serve

  • 1 cup garlic hummus

  • 1 lemon, cut into wedges to serve

Method

Step 1

Remove Silver Fern Farms Premium Ground Lamb from packaging and season with salt, freshly ground black pepper, cinnamon, cumin and oregano. Roll the meat into eight equal sized oval koftas. Arrange the koftas on a lined baking tray and drizzle with olive oil. Allow lamb koftas to rest at room temp for 10 minutes.

Step 2

Heat a frying pan or BBQ plate to moderate-hot. Add 2 tablespoons olive oil and cook the lamb koftas for 2-3 minutes on one side then turning to cook on all sides for a further 2-3 minutes each side. Remove meat from pan and leave to rest covered in foil for 3-5 minutes.

Step 3

In a bowl mix together the cucumber, red onion and parsley leaves with 1 tablespoon olive oil and sumac.

Step 4

Arrange the koftas on warmed flatbreads, with salad, tzatziki, and hummus. Accompany with lemon wedges and plenty of freshly ground black pepper.
