Ingredients

    General

  • 2 packs Silver Fern Farms Beef Tenderloin Steaks

  • ½ tsp each: caraway seeds, cardamom seeds, black peppercorns and turmeric

  • 2 Tbsp olive oil

  • Feta and Tomato Bake

  • 7oz feta

  • 1 lemon, zest and juice

  • ¼ tsp chili flakes

  • 2 stalks fresh marjoram or oregano

  • 10oz small vine-ripened tomatoes

  • 2 Tbsp olive oil

Method

Step 1

Preheat the oven to 390°F. Break the feta up into 10 large pieces and place in the bottom of a baking dish. Sprinkle over lemon zest and juice and chili flakes. Sit marjoram and tomatoes (still on the vine) on top and drizzle oil over. Bake for 15 minutes, until the tomatoes are starting to split.

Step 2

To make the spice mix, grind the spices together in a mortar and pestle or spice grinder. Rub the spice mix over the steaks and coat with oil. Season to taste.

Step 3

Preheat a frypan or grill and cook the steaks for 3 minutes each side. Transfer to a plate, cover, and rest for 5 minutes.
