Ingredients

    Venison Patties:

  • 1 lb Silver Fern Farms Premium Ground Venison

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tbsp gochujang (Korean chili paste)

  • 1 tsp ground ginger

  • 1 tsp black pepper

  • 1 egg, beaten

  • 1/4 cup panko breadcrumbs

  • Kimchi Slaw:

  • 1 cup kimchi, chopped

  • 1 cup shredded napa cabbage

  • 1 small carrot, julienned

  • 2 green onions, thinly sliced

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tsp sugar

  • Salt and pepper to taste

  • To Assemble:

  • 4 burger buns, lightly toasted

  • 1/2 cup mayonnaise

  • 1 tbsp sriracha (optional for heat)

  • Fresh cilantro leaves

  • Sliced cucumber

Method

Step 1

In a large bowl, combine the Silver Fern Farms Premium Ground Venison with diced onion, minced garlic, soy sauce, gochujang, ground ginger, black pepper, beaten egg, and panko breadcrumbs. Mix thoroughly until all ingredients are well incorporated. Form the mixture into 4 equal patties and set aside on a plate.

Step 2

Refrigerate the patties for at least 30 minutes. This helps them hold their shape during cooking.

Step 3

While the patties are chilling, prepare the slaw. In a large bowl, combine chopped kimchi, shredded napa cabbage, julienned carrot, and sliced green onions. In a separate small bowl, whisk together rice vinegar, sesame oil, sugar, salt, and pepper. Pour this dressing over the kimchi and vegetables, tossing well to combine. Set aside to let the flavors meld.

Step 4

Heat a grill or skillet over medium-high heat. Once hot, add the venison patties. Cook for about 4-5 minutes on each side, or until they reach your preferred level of doneness. Remove the patties from the heat and let them rest for a few minutes.

Step 5

In a small bowl, mix together mayonnaise and sriracha (if using) until smooth and well-blended.

Step 6

Spread a generous layer of sriracha mayo on the bottom half of each toasted bun. Place a venison patty on each bun. Top the patties with a generous portion of kimchi slaw, then add fresh cilantro leaves and sliced cucumber. Complete with the top half of the bun.

Step 7

Serve these Korean-style venison burgers immediately, accompanied by your favorite sides. Enjoy the unique blend of flavors in each bite!
