Ingredients

Venison Patties:

  • 1 lb Silver Fern Farms Premium Ground Venison
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 egg, beaten
  • 1/4 cup breadcrumbs

 Corn Relish:

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 red bell pepper, finely diced
  • 1 small red onion, finely diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 tsp olive oil
  • Salt and pepper to taste

 Spicy Mayonnaise:

  • 1/2 cup mayonnaise
  • 1-2 tbsp sriracha (adjust to taste)

 To Assemble:

  • 4 burger buns, lightly toasted
  • Fresh lettuce leaves
  • Sliced tomatoes
  • Sliced red onion

Method

Step 1

In a large bowl, mix together Silver Fern Farms Premium Ground Venison, diced onion, minced garlic, ground cumin, ground coriander, salt, black pepper, beaten egg, and breadcrumbs until well combined. Shape the mixture into 4 equal-sized patties. Place them on a plate and refrigerate for at least 30 minutes to firm up.

Step 2

While the patties are chilling, prepare the corn relish. In a medium bowl, combine corn kernels, diced red bell pepper, finely diced red onion, chopped cilantro, lime juice, and olive oil. Season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

Step 3

In a small bowl, mix together the mayonnaise and sriracha until smooth. Adjust the amount of sriracha according to your preferred level of spiciness. Set aside.

Step 4

Preheat a grill or skillet over medium-high heat. Cook the venison patties for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove from heat and let them rest for a few minutes.

Step 5

Spread a generous amount of spicy mayonnaise on the bottom half of each toasted bun. Place a venison patty on top of the spicy mayo. Add a spoonful of corn relish over each patty. Top with fresh lettuce leaves, sliced tomatoes, and sliced red onion. Cover with the top half of the bun.

Step 6

Serve the venison burgers immediately with your favorite side dishes. Enjoy the delicious combination of flavors and textures in each bite!
