Ingredients

  • 1 Silver Fern Farms Boneless Leg of Lamb

  • 4–5 garlic cloves, minced

  • 2–3 tbsp olive oil

  • 1 tbsp fresh rosemary, chopped

  • 1 tsp fresh thyme

  • Salt & black pepper to taste

  • 1.5 lbs red baby potatoes, halved

Method

Step 1

Preheat oven to 400°F.

Step 2

Pat the lamb dry and season generously with salt, pepper, garlic, rosemary, thyme, and olive oil.

Step 3

Let it rest for 10–15 minutes while you prep the potatoes.

Step 4

Toss baby potatoes with olive oil, salt, pepper, and a little rosemary. Spread around the lamb in a roasting pan.

Step 5

Roast lamb and potatoes for 50–65 minutes, depending on desired doneness (135°F for medium-rare).

Step 6

Turn potatoes halfway through to get them golden and crispy.

Step 7

Let the lamb rest 10–15 minutes before slicing.

Step 8

Serve with the rosemary potatoes and green beans.
