1 pack Silver Fern Farms Premium Ground Beef

1 cup wild rice

3 Tbsp olive oil

1 medium brown onion, peeled, diced

2 cloves garlic, crushed

1-2 Tbsp chipotle seasoning

1-2 tsp ground cumin
-
1 can black beans, washed and drained
-
1 can crushed tomatoes
-
2 green apples, sliced into sticks

1-2 long green chili, seeds removed, sliced

1-2 avocados, peeled, diced
-
2 limes, use 1 for juice and the other half to garnish

1 cup cilantro leaves

4 Tbsp sour cream to serve

Method
Step 1
Remove Silver Fern Farms Premium Ground Beef from the packaging and season with salt and freshly ground black pepper. Allow the meat to bloom at room temp for 10 minutes.
Step 2
Cook the rice according to packet instructions. Drain and allow to cool.
Step 3
Heat a saute pan to moderate-hot. Add 2 tablespoon of olive oil and diced onion. Season with salt and cook the onion until softened, approximately 5 minutes. Add the beef and fry until browned, approximately 5 minutes. Add the garlic, chipotle and cumin, stirring for 5 minutes. Turn down the heat and add rice, black beans and tomatoes, cook for approximately 5 minutes.
Step 4
Allow the beef chili to rest while preparing salsa. Mix together the apple, green chili and avocado with juice of 1 lime. Season to taste.
Step 5
Serve the beef chili in a bowl with green apple and chili salsa. Garnish with cilantro leaves and lime wedges.
