2 tsp Worcestershire sauce

1 tsp dijon mustard

1 tsp fresh thyme, chopped

½ tsp paprika

1 tsp brown sugar

½ tsp chili flakes

1 clove garlic, crushed

½ cup walnuts, chopped

½ cup coarse fresh breadcrumbs

¼ cup flat leaf parsley, chopped

1 lemon, zest of

2 cloves garlic, crushed

Walnut Pangrattato
Method
Step 1
Place the marinade ingredients into a small bowl and whisk to combine.
Step 2
Remove Silver Fern Farms London Broil Steak from the fridge and packaging and allow to bloom at room temperature for 10 mins.
Step 3
Place the steak into a container and coat with marinade. Cover and refrigerate for 4 hours or overnight.
Step 4
To make the Walnut Pangrattato, preheat the oven to 330°F fan assisted. Line a baking sheet with baking paper. Combine all ingredients except the parmesan in a small bowl. Place onto the baking sheet in a single layer and bake for 8 to 10 mins, tossing occasionally, until the crumbs are crispy and golden. Remove from the oven and stir in the parmesan. Season to taste. Set aside.
Step 5
Remove steak from the marinade and place into a foil lined baking dish. Season generously with salt and pepper. Bloom at room temperature for 20 mins. Meanwhile, preheat the broiler on high heat.
Step 6
Broil steak near top of heating element for 5 mins per side or until an internal meat thermometer reads 130-135°F for medium-rare. Broiling times will vary so use a meat thermometer to check for doneness.
Step 7
Transfer the steak to a cutting board and let stand for 5 mins. Slice across the grain into thin slices. Serve with the Walnut Pangrattato.
Step 8
Serve with Apple and Shaved Fennel Salad.To prepare Apple and Shaved Fennel Salad thinly slice 2 apples and 1 fennel bulb on a mandolin. Place into a bowl with 2 Tbsp lemon juice and 2 Tbsp olive oil. Add chopped fresh herbs. Season with salt and pepper and gently toss the ingredients together.
